Holiday Hi-Lites Cookbook
One of the best loved events People's Cooperative Services offers is our yearly Member Appreciation Day where members are able to pick up their new "Holiday Hi-Lites" cookbook.
Beginning in June, members are encouraged to send in their favorite recipes. The cookbook offers recipes and helpful hints. Six categories to choose from - Appetizers or Snacks; Breads; Cookies; Desserts & Candies; Meat, Fish, and Main Dishes; Salads & Vegetables. There is a large variety of members favorite holiday and everyday recipes - check some of them out.
Judy Skarie, Home Economist sets aside four full days each year to read and re-read all the recipes submitted, then choosing the top fifteen from each category to be published in the cookbook. Only 90 of all the recipes received make it into the cookbook.

Pineapple Cookies
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 cup crushed pineapple
4 cups flour
½ cup chopped walnutsCream shortening, sugars, and eggs. Mix vanilla, baking powder, baking soda and crushed pineapple. Add flour and nuts. Drop by rounded teaspoons onto cookie sheet. Bake at 350 degrees – 8 to 10 minutes.
